But lately we are having a love affair with the Instant Pot! Talk about simple, stress-free, quick and practically fool-proof cooking for busy moms! One pot to clean. No heating up the whole kitchen to make dinner. Even freezer to pot recipes!
While my retired mom has lots of time to surf the internet in search of awesome Instant Pot recipes she can make (and we are so lucky she lives with us, so even in these quarantine pandemic times we get mom/grandma hugs with dinner), when it’s my turn to cook, I need something quick.

By far, our favourite Instant Pot chef is Jeffrey Eisner from Pressure Luck, with his tagline “If Jeffrey can do it, you can do it!”. We love the pasta recipes, even my picky eaters! There is a great beginners guide to your Instant Pot, plus how to cook the basics, like hard boiled eggs (a staple in our house).
Skinnytaste One and Done
Way before our Instant Pot obsession, we were big fans of Skinnytaste chef Gina Homolka. She’s a busy mom of two kids herself, so she gets it! Simple to make, healthy recipes that the whole family enjoys! Now with a recipe book that let’s us use the Instant Pot for quick and delicious meals, it’s another staple on our cookbook shelf.
Instant Pot Bible
Bestselling cookbook authors Bruce Weinstein and Mark Scarbrough have created 350 Instant Pot recipes for just about everything you can think of! While I miss the gorgeous photos that usually would suck me in to a cookbook, the extra tips and ideas for customizing recipes makes this Instant Pot cookbook a winner!
Instant Pot Cookbook: Instant Dinners for Busy Lifestyles
The reason I love this Instant Pot cookbook by Bitsy Keown is the simplicity. Recipes like Beef & Broccoli, Apple Pork Chops, Sloppy Joes and Parmesan Ranch Corn on the Cob. Easy to find ingredients and flavours my picky eaters like make it easy to get dinner on the table fast!
