Fall just begs for warm, comforting soups. Cool crisp days, chilly nights. Going for a family walk through the trees, leaves crunching under foot, that “fall” smell in the air, warm fleece sweaters. Who doesn’t want to come home to a cup or bowl of hearty, soulful soup?
But with kids back to school, the changing seasons, and the ramp up to the holidays, everyone’s schedule is so busy! If you’re going to make soup, it has to be quick, simple, with few ingredients, but great flavours that appeal to all ages. Pumpkin Sausage Soup
This one has been a family staple in our house for years! It’s our starter for Thanksgiving dinner, and I love to make a batch as soon as the weather turns chilly. Super simple to make in an afternoon, it also freezes well, making it a perfect lunch staple at work!
Olive Garden Zuppa Toscano
I miss having Olive Garden here in Canada! But while I have to wait to get my pasta fix for occasional cross-border shopping trips, I can make this copycat recipe for Olive Garden Zuppa Toscano. Chunky potatoes, italian sausage and kale make this a hearty meal!
I like to slice the potatoes thin with a mandoline slicer. It makes cooking even faster, and I think gives it a classier presentation.

My aunt Shirley still lives on the “back shore” near Yarmouth, Nova Scotia. This is her recipe for corn chowder that has been passed down in our family for decades. Budget friendly and simple to make, you can amp it up by adding fish or seafood like clams or shrimp. Paired with cheese biscuits, it is the perfect meal to bring back memories of foggy days “down east”!
- 4-5 potatoes, peeled and cubed
- 2 cans evaporated milk
- 2 cans cream corn
- crackers, crushed
- salt and pepper to taste
- In a large pot, boil potatoes until fork tender.
- Add milk and corn, cook over medium-low heat, stirring often to prevent scalding.
- Add crushed crackers to thicken as desired.
- Salt and pepper to taste.
Chicken Noodle Soup
What is better when you’re sick than Chicken Noodle Soup? There is definite magic when you combine broth, chicken, egg noodles and veggies.
