Holiday Stuffing Recipes
Stuffing recipes are one of the most popular searches during the holidays. There are tried and true family recipes, passed down from generation to generation. And there are more adventurous recipes using fresh, new ideas and flavour combinations, from savoury to sweet.
This recipe for Mushroom Hazelnut stuffing is a combination of the two. Traditional flavours like sage, paired with mushrooms and hazelnuts for a twist. Used in my family for both Thanksgiving and Christmas feasts, this recipe has been a perennial favourite for close to 40 years. While we might cheat, using packaged or frozen versions of almost every other dish on the holiday table, the Mushroom Hazelnut stuffing has to be there. Good thing it can be made ahead of time!
While we have used this recipe for stuffing the turkey, everyone in the family prefers it roasted along side the turkey, for about 30-45 minutes, uncovered. It gets a beautiful, crunchy yet moist texture that provides variety in our mainly mashed sides.

It makes for quick work chopping shallots (plus saves you the tears), hazelnuts and even parsley. And if you’re pressed for time, there is no shame in purchasing sliced mushrooms, or cubed bread for stuffing. This is all about easy and quick. Slaving over a stove all day does not define how much you love your family.

If you’re making ahead, cool completely and store in an airtight container or ziploc bag (1 gallon size) in refrigerator for up to 5 days, or freeze. Thaw in refrigerator overnight before stuffing turkey, or roast alongside the turkey in a separate pan for 30-45 minutes for that crispy yet moist texture!
Mushroom Hazelnut Stuffing Recipe
- 1 c butter
- 1 c shallots, finely chopped
- 1 clove garlic, minced
- 1 tbsp sage
- 1 tbsp marjoram
- 4 c mushrooms, sliced
- 1 c hazelnuts (or filberts), chopped
- ½ c parsley, chopped
- 2 tsp salt (omit if using salted butter)
- 1 tsp pepper
- 1 tsp sugar
- 8 c french bread, day old, cubed
- In a large skillet, melt ½ c butter. Add shallots, garlic, sage and marjoram, cook over low heat for 5 minutes.
- Add remaining butter and melt.
- Stir in mushrooms and cook over medium heat for 3 minutes.
- Add hazelnuts, parsley, salt, pepper and sugar. Cook for an additional few minutes.
- Place bread cubes in a large bowl. Add skillet contents and mix well.
- Let cool completely before stuffing turkey, or store in airtight container in refrigerator or freeze.
